Description

History
- The origin of sushi dates back over 1,000 years in Southeast Asia, where a method of preserving fish in fermented rice was developed. This method, called narezushi, was brought to Japan and evolved into a more refined and less fermented style over time.
- In the Edo period (1603–1868), a new type of sushi called edomae-zushi was developed in Edo (now Tokyo). This is the modern form of sushi that uses fresh raw fish placed on small portions of vinegared rice. It became popular as a kind of "fast food" sold at street stalls.
- Types of modern sushi include:
- Nigiri: hand-pressed rice with a topping (like tuna or shrimp)
- Maki: rolled sushi using seaweed (nori)
- Temaki: hand rolls in a cone shape
- Chirashi: a bowl of sushi rice topped with various ingredients
- Sashimi (although not technically sushi): just slices of raw fish without rice
