Sushi is a traditional Japanese dish made with vinegared rice (called sushi rice) combined with other ingredients like raw or cooked seafood, vegetables, or egg. It is often served with soy sauce, wasabi, and pickled ginger.


History

The origin of sushi dates back over 1,000 years in Southeast Asia, where a method of preserving fish in fermented rice was developed. This method, called narezushi, was brought to Japan and evolved into a more refined and less fermented style over time. In the Edo period (1603–1868), a new type of sushi called edomae-zushi was developed in Edo (now Tokyo). This is the modern form of sushi that uses fresh raw fish placed on small portions of vinegared rice. It became popular as a kind of "fast food" sold at street stalls. Types of modern sushi include: Nigiri: hand-pressed rice with a topping (like tuna or shrimp) Maki: rolled sushi using seaweed (nori) Temaki: hand rolls in a cone shape Chirashi: a bowl of sushi rice topped with various ingredients Sashimi (although not technically sushi): just slices of raw fish without rice
